A renowned list of Canada’s best restaurants is back after a pandemic-induced hiatus, ushering in what some hope will be a foodie revival in this country.
The list of Canada’s Top 100 Restaurants named Published on Main the No. 1 Culinary Spot — the first time a Vancouver restaurant topped the list — while Major Tom in Calgary was named Best New Restaurant.
The rankings were revealed at an event in Toronto on Monday night, less than three weeks after the Michelin Guide announced it was heading north of the 49th parallel with a guide to Toronto for the first time.
“We always look at the Michelin Guide, we always look at the San Pellegrino list,” said Gus Stieffenhofer-Brandson, executive chef at Published on Main.
“Having our own top 100 list here in Canada, with restaurants that rival a lot of those international restaurants, people have to be careful of that.”
He said he hopes Canada’s presence on these international lists will draw people’s attention to the country-specific lists.
“I think we have some of the best products in the world at our disposal,” Stieffenhofer-Brandson said.
Making the list — and more importantly landing the top spot — serves as validation for his team’s hard work over the past few years, he said.
Posted open in December 2019, just months before the COVID-19 pandemic forced restaurants — and just about everything else — to close. Stieffenhofer-Brandson said staff worked hard to regain their initial momentum when the restaurant reopened, albeit with restrictions, a few months later.
“We wanted the experience to be as normal as possible for our customers, and we still wanted to be able to deliver everything we had planned,” he said. “So it’s really nice to have this recognition now that we’re fully open to full capacity.”
Published markets itself as a globally inspired restaurant with “Canadian roots”. Japanese milk buns are served with bee pollen, morels with nettle dumplings. Many of its ingredients are locally sourced.
Best New Restaurant
This is the seventh edition of the Top 100 in Canada list, which is chosen by 100 industry insiders and published by food writer Jacob Richler.
He said the list is populated with more new restaurants this year, so he also released a list of Canada’s top 20 new restaurants.
“It’s very gratifying to see for an industry that we’ve been told repeatedly is really on the ropes,” Richler said.
Among these new restaurants is Major Tom, a Calgary-based Concorde Entertainment Group company that opened its doors last summer.
It was supposed to open a year earlier, but plans were put on hold due to COVID-19, said Concorde culinary director Garrett Martin.
That wasn’t necessarily a bad thing, he added.
“I really feel like everything went a lot better than we originally planned because everyone was able to spend a bit more time making sure everything was going the way we wanted it to be. see in our heads,” Martin said. .
The restaurant, located on the 40th floor of Stephen Avenue Place, puts a gourmet twist on familiar classics. Decor leans towards mid-century luxury and serves to highlight views of downtown Calgary.
Martin said making the list might drive more customers to Major Tom, but more importantly, he’s grateful for the signal it sends to the restaurant team.
“It’s especially a huge pat on the back for the staff who have been working tirelessly since long before we opened,” Martin said. “It’s really cool for us to be recognized for something like this.”
